Quinoa Salad Froggy's way




Recently I discovered Quinoa and I have to say I LOVE it. I buy it from nuts.com so its cheap and comes prewashed and ready to cook. I make mine in the microwave so its fast and easy. I usually make it for lunch.
To make the Quinoa I take a large bowl and put in 1 can of chicken broth and 1 cup of quinoa. This equals to 2 cups chicken broth and 1 cup quinoa. I cover the bowl with plastic wrap and microwave for 10 mins. I left it sit for about 2 mins then put it back on for about 5 more mins or until the juice is gone. You can make this with less broth and do 1.5 cups of broth and reduce your cooking times. This is just how I prefer to do mine. BECAREFUL when you remove the plastic wrap because the steam will pour out!stir, fluff and its ready to eat.

now for my salad..
- I take a 1/2 to a whole avacada and cut into into pieces. if you use half dip the other half in lemon juice so it wont brown and refrigerate it.)
- some cherry or grape tomatoes quarted (long way them short way)
- half a can of black beans(save other half for extra quinoa and another lunch)
- chicken. (canned I used natures promised which is gluten free or purdue's rotisserie which is GF) 

oh and if you want a great dressing take an avacado, 1/4 cup of lime or lemon juice and a few dashes of hot sauce and blend them in blender. yum :)

mix together and enjoy! makes a filling GF lunch!

Froggaritaville Chocolate Chip Banana Bread


So I promised recipes and here is my first one. I am on a new diet which is more of a lifestyle change. I can not eat any gluten due to an illness so I am embarking on a whole new adventure of learning how to cook favorite foods healthier that also taste great!

 Not only is this bread Gluten free, it is dairy free (if you use enjoy life chocolate chips or no chocolate chips) and soy free.


Ingredients:

6 cups almond flour - I get mine at nuts.com love them!
1 teaspoon salt
1 heaping teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon nutmeg
6 eggs
2 teaspoon vanilla
1 teaspoon apple cider vinegar
2/3 cup honey
6 medium bananas
1/4 to 1/2 cup mini chocolate chips 
1/2 cup of unsweetened shredded coconut
 1/4 cup chia seeds
you could even add walnuts or any other nut in

Directions:

Preheat oven to 350 degrees. Spray three regular-sized loaf pans with oil. Set aside.

Mix first five ingredients together in a medium-sized bowl. I usually use a big 8 cup measuring cup I own to do this. Set aside. In a large bowl, mix eggs, vanilla and vinegar. Add honey and mix well. (when you measure out your honey either spray your measuring cup with cooking spray or run it in hot water before you put honey in to get the honey out easily) Add dry ingredients to wet ingredients and mix to combine. Add bananas and mix well. (I cut mine above the bowl and mush them with the mixer before I turn it on then to mix them in) Add chocolate chips and coconut.... you can add in 1/4 cup of chia seeds if you would like and mix to combine. If you didn't add in the chia seeds you can sprinkle them on top of the batter before you put them into the oven. I prefer them on top.

Divide batter among three pans. Place in the oven for 40 to 45 minutes or until a toothpick inserted into the center comes out clean.
 
Enjoy!
 
Let them cool. I usually stick one in the freezer, one in the fridge and leave one out to snack on. 
Another helpful hint...toss your bananas in the freezer! skin and all...when you want to use them take it out and let it sit a bit. They will be perfect for banana bread, smoothies, etc!

New things are coming...

Hi everyone!

New things are coming to Froggaritaville. I am not only going to be posting some craft that I make but I also am going to be posting some recipes plus this and that. Some might be about TV shows I like...product reviews....some might be rants...some might be about organization...free blogger backgrounds and buttons I have made (might need to make a separate blog for this because I have a bit plus always love to make more!) oh and lets not forget about contests/giveaways! Tell me is there anything in particular that you would like to see regularly like TV Tuesdays or Helpful Hint on a certain day etc??

Love you...

 

Hi Everyone....Today is my day to post on the SSCC Challenge Blog
Today's Card is made using Stamping Scrapping's New Stamps Fancy Numbers (Butterfly and the Big Circle around it) , Tab Basics 2 , Bracket Basics 1 and Bracket Basics 2. I stamped them all in Memento Tuxedo Black. The butterfly I used Smooch Illuminate to color it in to give it a shiny sheen to it.
The Tab on the side is from Stamping Scrapping's Terrific Tab Die's. The paper is all (except the white circle) Basic Greys Little Black Dress.

Sewed Around

This project is a card I made with Stamping Scrappings new
Stitched with love and sew sayings stamps sets.


I used Stamping Scrappings Sewing Stamps Sew Sayings and Stitched with Love on this card. The paper is Basic Greys Little Black Dress paper, the die shapes for the spool of ribbon and the dress mannequin are Sizzixs Tim Holtz Sewing Room Die cut out in felt. The circle is Spellbinders Standard Circles Large

Bonus Project!
I made this also using the new Sewing Stamps...


This is just the plastic cup that you buy that has cupcake papers in it. I cut out felt the size of the cup them I used my Tim Holtz Ruler and marked the felt every inch and cut a small slit with my scissors to run the lace through on the top of the felt and the bottom.
I used my Spellbinders Standard Circles to do all the circles on the top. The Circles with the xxxxxx on it fit perfectly inside the cup lid so you don't need to glue them on.
